The ingredients used to make this dish are:
Eggplant: One large, peeled and chopped.
Chives: Half cup, chopped.
Olive Oil: Two tablespoon.
Onion: one medium sized onion, chopped.
Garlic: Two cloves, chopped.
Celery: two ribs, chopped.
Tomatoes: Two chopped.
Red wine vinegar: One tablespoon.
The preparation method of Chives Curry is very simple. Place the chopped eggplant in a strainer and sprinkle with salt. In a large frying pan over medium heat, put the onion in oil and stir it until it turns golden color. After it turns to golden color, add chives, garlic and celery and mix it for two minutes. Now squeeze the moisture from chopped eggplant and add it to the frying pan. cook and stir frequently, until the eggplant is tender for about ten minutes. Allow the dish to cool to room temperature. Stir in tomatoes, vinegar and chives. Serve this dish with sandwiches, chapatti, Nan and paratha.
